Miguel Caño of one-Michelin starred Riojan restaurant, Nublo, will be cooking a special 7-course tasting menu at Barrafina Borough Yards on Tuesday, 19th March for the next edition of the Barrafina Invita series.
Nublo occupies a historic 16th century palatial home in the heart of Haro, La Rioja, led by a team of young ex-Mugaritz chefs. Launching to critical acclaim in 2021, the restaurant was awarded a Michelin star and Repsol Sun within months of opening.
Inspired by an abiding love of the region and its rich gastronomy, the restaurant aims to “create pure flavours, showcase wood-fired cuisine and embark on a culinary journey through La Rioja, with a nod to its culture, its native ingredients and its landscapes”. Here, the cutting-edge approach is very much inspired by tradition.
The £100 tasting menu carefully designed by Caño will be playful, ingredient-led, and innovative. Dishes will include:
Chip Ibérica con papada curada
Ibérica ham, potato crisp with bechamel sauce
Lima y carabinero
Lime and carabinero
Guisante lágrima con tendones
Smoked peas with beef tendons
Solomillo al queso azul
Sirloin with blue cheese and cristal pepper
An optional wine pairing from third-generation family business considered Riojan winemaking royalty, Bodegas Muga, will be available on the night.
Barrafina Invita showcases the breadth and quality of some of the best Spanish cooking from all over Spain and the rest of the world. Previous guest chefs include Xavier Pellicer, Borja Marrero of MuXgo in Gran Canaria, Jordi Bross of San Sebastián’s celebrated Mugaritz, and Jose Maria Goñi Martínez of Michelin-starred El Club Allard in Madrid.
