Barrafina is proud to announce rising star Irís Jordán Martín as the latest guest chef in the Barrafina Invita series celebrating the breadth and quality of Spanish cooking, in partnership with Gin Mare.

Nominated as one of eight in the ‘Best New Chef’ category at this year’s prestigious Madrid Fusión, rising star Irís Jordán is Head Chef of third-generation restaurant Ansils, alongside her brother Bruno who leads the front of house. Under their guidance, the restaurant has turned over a new leaf with a focus on contemporary cooking that seeks inspiration from tradition.

“The mountain in the restaurant” – Located in the heart of the Pyrenees in the Benasque Valley, Ansils focuses on primitive cooking techniques revitalised with elegance, personality and a lightness of touch, as time-honoured ingredients, including game and vegetables from their own garden takes centre stage.

Barrafina Invita sees Barrafina’s Executive Chefs, Antonio Gonzales Milla and Francisco Jose Torrico, invite the best Spanish chefs or chefs cooking Spanish food, over to cook a special menu at Barrafina Borough Yards. Previous guest chefs include Jordi Bross of San Sebastián’s celebrated two-Michelin starred Mugaritz, Borja Marrero of MuXgo in Gran Canaria and Miguel Caño of one-Michelin starred Riojan restaurant, Nublo.

Irís Jordán Martín will be cooking a special set menu at Barrafina Borough Yards on the evenings of 22nd and 23rd October. The experience is priced at £85 and includes a Gin Mare welcome drink and set menu.
